As a group they are called “Heirloom Tomatoes”, with the seeds handed down from generation to generation. Heirloom tomatoes are packed with flavor and the different varieties come in any number of textures and colors. One source for heirloom seeds lists over 350 varieties. In the past few years there has been a greater number of farms willing to grow and sell a larger variety of these tomatoes. Names like: Moonglow, Hawaiian Pineapple, Omar’s Lebanese, Hogs Heart, Black Zebra, Polish Giant, Blue Ridge Mountain and Brandywine are now found in produce markets, specialty food stores and farmers’ markets.
As chefs, we now have the opportunity to use Heirloom fresh tomatoes to match a palette of delicious tastes, textures and wonderful shapes and colors to other ingredients in salads, hot and cold pasta dishes, pizzas and sandwiches.
