Pollo Mediterranean
  • 2 Tbsp Olive Oil (#280390)
  • 12 Chicken Tenders, sliced into strips (#1001968)
  • 3 cloves Garlic, minced (#340051)
  • ½ tsp Salt (#110600)
  • ½ tsp Ground Black Pepper (#450430)
  • 1 Tbsp Italian Seasoning (#450420)
  • ¼ cup Sun-Dried Tomatoes, packed in oil, drained and chopped (#350010)
  • 2 Tbsp sliced Green Olives (#330080)
  • ½ cup dry White Wine
  • 2 Tbsp chopped Fresh Parsley
  • ½ cup Sour Cream (#180100)
  • 1 cup Milk
  • ½ tsp Salt (#110600)
  • 1-½ tsp Cornstarch
  • ¼ cup Water
  1. Heat olive oil in a skillet over medium-high heat.  Place chicken and garlic in the pan.  Season with ½ tsp of salt, the pepper, and Italian seasoningSprinkle lemon-pepper seasoning.
  2. Stir in the tomatoes, olives, wine, and parsley.  Reduce heat to low and continue cooking until the chicken is no longer pink in the center.
  3. Remove chicken and place on plate, leaving the sauce in the pan.  Stir sour cream, milk, and ½ tsp salt into the remaining sauce. 
  4. whish cornstarch and water together in a small bowl.  Increase heat to medium and whisk in the cornstarch mixture.  Continue stirring until the sauce has thickened. 
  5. Serve the sauce with the chicken.
