Pasta with Ham & Peas
  • 1 lb. Bellissimo Pasta (#310050)
  • 4 Tbsp. Unsalted Butter + 1 more for saucing, optional (#1003930)
  • ½ cup Chopped Onion, about ½ of a medium onion (#340060)
  • ¼ lb Bellissimo Ham, cut in thin sliced steaks (#252203)
  • 1 cup thawed frozen Peas or cooked fresh Peas
  • ½ cup Cream
  • ½ tsp. Fine Sea Salt (#1002252)
  • Freshly Ground Black Pepper (#1001639)
  • Freshly Ground Nutmeg
  • 1/3 cup freshly grated Parmigiano Reggiano (#190255)
  1. While pasta water is heating, melt the butter in a large skillet over medium-low heat, then add the onion.  Cook the onion over medium heat, stirring frequently, until it becomes translucent and then lightly browned, then add the diced ham.  Cook, stirring, for about 1 minute more.  Add the peas (if using thawed frozen peas) to the pan and cook for 5 minutes over medium heat, stirring occasionally. 
  2. Stir in the cream, salt, peas (if using fresh cooked peas), a pinch of freshly ground nutmeg and a very generous helping of black pepper.  Raise the heat to high and continue cooking, stirring frequently, until the cream reduces and forms a thick sauce.
  3. Serve over pasta.
