Pasta Goodfellas
  • 3 oz fresh Sausage meat – out of casing (#240000)
  • 3 oz fresh Chicken, diced into 6 pieces and lightly floured (#260456)
  • 2 tsp. sliced Garlic (#340051)
  • Bellissimo Extra Virgin Olive Oil (#280390)
  • about 2 oz White Wine
  • 3 oz Tomato Strips (#401050)
  • 3 oz Pasta Sauce, using Bellissimo Tomatoes and a basic onion/garlic/basil recipe
  • 1 cup Baby Spinach
  • 8 whole silver-dollar Mushrooms, lightly blanched
  • 8 oz (cooked weight) Bellissimo Rigatoni, al dente (#310012)
  • 1 oz of freshly grated Pecorino Romano Cheese (#190345)
  1. Heat the oil, add sausage and floured chicken.  Lightly brown both sides, then add the garlic just before they are almost cooked. (You never want to burn the garlic.)
  2. Deglaze with a splash of white wine.  Toss in the tomato strips, hit them with some salt so that they bleed nicely for a minute.  Add the mushrooms, spinach (wilt and toss), and pasta sauce.  Add the pasta and grated cheese, and toss well.
  3. Place in a large bowl, garnish with basil sprig in middle and parsley and grated cheese around the edges. 
  4. A nice glass of Burgundy provides the perfect complement for this dish.
