Mediterranean Farfalle Pasta
Ingredients
- 1 pound Farfalle – bowtie pasta (#310888)
- 10 oz Salmon Fillet, diced
- 20 Asparagus Spears, cut to half
- 3 Tbsp. sliced Green Olives (#330080)
- 1 Tbsp. Capers (#361100)
- 2-½ cups Tomato Sauce (#400850)
- 75 ml dry White Wine
- 1 Tbsp. chopped Parsley (#450325)
- 1 tsp. Garlic, minced (#360190)
- 3 Tbsp. EV Olive Oil (#280395)
- Salt & Pepper to taste (#110610 & 450440)
Directions
- In a large skillet, heat the olive oil and saute the asparagus, garlic and olives.
- When the salmon cubes are half cooked, deglaze with white wine. Cook for 2 minutes more and add the tomato sauce, capers and chopped parsley. Reduce the sauce slightly.
- Cook the farfalle according to the package directions, strain and toss in the sauce.
