Marbled Cheesecake Bars
Ingredients
  • 24 cream filled chocolate Sandwich Cookies, finely chopped (2 cups)
  • 3 Tbsp. Butter (#180140)
  • 1 cup Sugar (#110652)
  • 2-8 oz packages Cream Cheese, softened (#190455)
  • 1-16 oz Mascarpone (#191200)
  • 1 tsp. Vanilla (#1000212)
  • 4 Eggs
  • 1 cup Sour Cream (#180100)
  • 1 square Semi-sweet baking Chocolate (#110575)
Directions
  1. Preheat oven to 350 degrees.  Place chopped cookies in a 1 quart bowl.  Microwave butter until melted, add to crushed cookies and mix well.  Press crumb mixture in a 15 x 10 x 1 pan (jelly roll pan). 
  2. In a 2 quart bowl, beat cream cheese, mascarpone, sugar and vanilla until well blended.  Add eggs, one at a time, mixing well after each addition.  Stir in sour cream until well blended.  Place batter in a small bowl. 
  3. Stir in melted chocolate, set aside.  Pour remaining batter over crust, carefully spreading to edges of pan.  Place chocolate mixture in a decorator bag fitted with a tip.  Pipe chocolate batter in 5 length-wise strips equal distance apart on top of batter.  Take a knife and cut crosswise through chocolate several times for marble effect.
  4. Bake 20 minutes or until set.  Cool bars to room temperature and cut into squares. Refrigerate.
