Chicken Salad Sandwich Spread with Herbs
  • 3-4 cups chopped cooked Chicken Breast (#261252)
  • Salt and Pepper (#110610 & 450435)
  • 1 tsp chopped Fresh Parsley
  • 2 tsp chopped Fresh Chives
  • ¼ tsp Dried Dill Weed (#450414)
  • ½ tsp Dried Leaf Oregano (#450120)
  • 1 Tbsp fresh Lemon Juice
  • ½ to 3/4 cup Mayonnaise (#294050)
  • Salt & Pepper to taste (#110610 & 450435)
  • Lettuce Leaves
  1. Toss the chicken with the fresh and dried herbs.  Combine half cup of mayonnaise with the lemon juice.  Mix with the chopped chicken and add more mayonnaise as needed for texture and to taste.  Stir in salt and pepper to taste.
  2. Serve in lettuce lined buns or rolls, sliced bread or toast along with soup, sliced tomatoes, or a tossed fresh salad.
