Braised Artichokes
  • 6 to 8 cleaned Artichokes
  • 1 cup dry White Wine
  • ¼ cup Olive Oil (#280390)
  • ½ Lemon
  • pinch of Salt (#110600)
To Serve
  • Extra Virgin Olive Oil (#280390)
  • juice of ½ Lemon
  • Cracked Black Pepper (#450435)
  • Sea Salt (#110610)
  • chopped fresh Parsley
  1. Drain your cleaned artichokes and place them in a pot.  Add dry white wine, olive oil, a pinch of salt and the lemon half.  Fill the pot with water just to the top of the artichokes.  Place on a burner and bring to a boil.  Reduce the heat to a simmer and continue to cook until the artichokes are fork tender, which will take about 25-30 minutes depending on how large and how fresh your artichokes are.
  2. Once cooked tender, drain the artichokes and place in a bowl.  Drizzle with extra virgin olive oil, squeeze juice of half lemon over them, and then add cracked black pepper and sea salt.  Toss to coat evenly and then sprinkle with chopped fresh parsley.  Serve warm or at room temperature.
